   Chicken: Remove chicken from marinade. Discard marinade. Liberally sprinkle breasts with salt and pepper. In the oven: Roast at 425o F for about 20–25 minutes, until the internal temperature registers 165o F. In a pressure cooker: On sauté mode, heat olive oil and brown chicken on each side. Remove. Add chicken broth to the pot and deglaze. Place the chicken on a trivet and cook on high pressure for 8 minutes, with 10 minutes’ natural release. Whole baby potatoes can be tossed on top of the breasts if cooking this way.

   Serve with pineapple salsa.
